Bonfire Night! Simple Vanilla & Spice Cupcakes!

Remember, remember the fifth of November,

Gunpowder, treason and plot.

On November 5th people all across the UK celebrate bonfire night.

It’s a great time of year where you all get bundled up to watch the fireworks. Whether that be small fireworks parties in back gardens or a big organised firework display in public parks. We do this because it’s the anniversary of an attempt to blow up the Houses of Parliament which was led by Guy Fawkes. It is called the Gunpowder Plot, and bonfires are lit to burn the “guy” (not a real guy obviously!).

I thought it would be fun to make some cupcakes for bonfire night to have after we have been to see the fireworks and a lovely warming stew for dinner. So, keeping in mind that we have all come home from a chilly evening out I decided to go with a spiced cupcake (kitchen smells gorgeous by the way) and to keep the decorations with that in theme with bonfire night too.

I hope you like these as much as I enjoyed making them. We are certainly looking forward to tucking into them after the firework display!

Ingredients (yields 12 cupcakes)

175g Self Raising Flour

175g Caster Sugar

175g Butter

3 Eggs

1 tsp Ginger, ground

1 tsp Cinnamon, ground

1 tsp Nutmeg, ground

1 tsp Vanilla Extract

2 tbsp Milk

Decorations

Chocolate Matchsticks

Vanilla Butter cream (My Cupcake Addiction)

Method:

  1. Pre-heat the oven to 180°c. Line a 12-hole muffin tin with cupcake or muffin cases
  2. Beat the butter until smooth and is pale in colour
  3. Add the sugar to the butter and cream until light and fluffy
  4. Add in the vanilla and other spices and mix until combined
  5. Gradually add in the beaten eggs and mix on medium to high speed until fully combined
  6. Fold in the sifted flower then stir in the milk slowly (as to not knock out the air) until just combined
  7. Place in the oven for 20-25 mins or until tooth pick comes out clean
